InstantPot Smoky Spicy Blackeyed Peas + Greens
A Southern New Year's Tradition for prosperity and luck! This is my #Instantpot twist on a family favorite from my Kentucky-born-and-raised Dad.
1 bag dry black eyed peas rinsed 1 yellow onion diced 3-4 c mustard or turnip greens 6 strips thick applewood smoked bacon diced 64 oz chicken or veggie stock 3 tsp ea Smoked paprika, Cayenne, black pepper 5 tbsp bourbon 1/2 tsp pink salt 3 cloves garlic 1/4 c wild rice
As always with Instantpot, anytime you are manually cooking, err on the side of more spices, as the steam cook does not infuse as much flavor as the slow-cook setting.
QUICK METHOD: Sautee mode: Cook bacon, garlic and spices, de-glaze with bourbon and splashes of stock, about 10 mins.
Add in rest of ingredients, submerging all beans, cover and pressure cook manually on high 30 mins. Natural release for 10 mins, then quick release.
ALTERNATE SLOW & LOW METHOD: Manually cook for 20 mins, then SLOW COOK after steam release for 2 hours.
