Here's a relatively easy braised lamb recipe that basically cooks itself, for a festive Passover, Easter or weekend meal that tastes like you slaved away for hours, but give you plenty of time to tend to other things. Braised Lamb with Garlic Mashed Potatoes

Prep Time: 10 mins | Cook Time: 2 1/2 hours
Ingredients List:
1 lamb shank per person (do not trim)
1 small bag baby carrots
1 can tomato puree
4 whole tomatoes
5 cloves garlic
Several sprigs fresh thyme
Several sprigs fresh rosemary
Salt and pepper to taste
1 large potato for every 2 people
